Easy Healthy Pancakes


I will be the first to admit that I must have been one of the most nieve new brides in the world. A couple days after getting married, my husband asked if I would make pancakes for him for breakfast. He knew that I didn't know how to cook yet and I was appalled that he would make such a difficult request! I remembered how my mom made pancakes, and since I didn't have a recipe, I was a little discouraged. Of course, my mom made everything from scratch. I'm not sure she knew any other way! I apparently didn't know any other way either because for the first time ever, I discovered that pancake mix existed. Then, I discovered instant potatoes. I was in complete shock that all these shortcuts were out there!

Thankfully, I found a really pancake recipe that is almost as easy to make as the mix, but much tastier.

Easy Healthy Pancakes

2 1/2 cups flour (I use 1 1/2 cups unbleached all-purpose and 1 cup wheat)
2-3 tbsp ground flaxseed meal
1 tbsp baking powder
1 tbsp baking soda
1 tbsp vanilla
1 tsp cinnamon
soy or rice milk (add as much as necessary)

Instructions: Put all ingredients into a bowl, adding the soy milk slowly while stirring. Stir with a spoon until the preferable consistency is reached. If you like thin pancakes, the batter should be more runny. If you prefer thicker pancakes, use less milk.

As you can see, I love to add blueberries to my pancakes!
